2 tblsp. oil
1 3 to 4 lb. cubed pork loin roast
1 onion (chopped)
1 16 oz. can stewed tomatoes ( diced)
1 cup Rosetta's Salsa
2 tsp. cumin
1 green pepper (chopped)
1 clove garlic (crushed)
16 oz. water
1 can green ortega chili's (diced)
salt & pepper to taste
In dutch oven, fry cubed pork in oil until browned. Add onions,
peppers, garlic, & chili's. Stir frequently until meat is
slightly crisp & veggies lightly browned. Add tomatoes, water,
salsa, & spice. On low heat, simmer for 30-45 min.'s. (done
when meat is tender) Serve in heated flour tortillas or in omelet's,
topped with cheese & salsa. Serves 6
